Pitmaster Combo
From the first bite of brisket to the last bite of smoked sausage, this combo sent me straight back to the original Central BBQ in Memphis in the early ’80s. The smoke on everything is always just right and the texture of the brisket is “fall apart” good, with the perfect rind on the outside. The smoked sausage is not overly fatty, with a nice pop to the skin. The sides were excellent as usual, my favorite being the barbecue beans, though the potato salad with lovely chunks of egg is nice as well. The sauces all hit the mark. Thanks Central BBQ for keeping your food consistency impeccable. After four decades, it’s nice to know that it only gets better.
