Crispy Brussels Sprouts
I have very few food prejudices, but brussels sprouts are one of them. Luckily, the preparation of these are unique, inventive and really tasty! Neighbor’s uses small, tender brussels sprouts, coats them with olive oil and then high temp roasts them with hot honey. The high temperature is how these cruciferous health pucks actually get crispy. When you mix in the sharp tart crispness of Fuji apples you have an unbeatable side dish, light meal or late-night snack. When I was a lad and my mom used to yell “eat your vegetables,” it’s too bad these things weren’t around. If they had been, I would simply have slipped her a sly grin, devoured her ultimatum and asked, “May I have more please?“.
