Carrot Cake Cupcake
When I heard that the entire bakery at Sunflower Bakehouse was gluten-free, I was so surprised I made the man behind the counter repeat himself. This was true of not just the bakery, but the whole restaurant. I could have cried. The slightly oversized cupcakes are the shining stars of the bakery case with their swirls of frosting and a variety fit for dreams. The carrot cake cupcake is good, not “good for gluten-free,” good for cupcakes in general. Carrot cake can be too wet, and gluten-free can be too dry or too heavy. This cupcake has none of these problems. First bite was perfectly soft and perfectly spiced. The frosting is a smooth buttercream with a sprinkle of cinnamon (I swear I could taste hints of caramel). Forget “good” try “divine.” Not only could I hardly believe it was gluten-free, I was shocked it was vegan.
