It’s two, two, two flavor wallops in one. Shawarma is the Middle Eastern cousin of the Greek gyro, but with a more complex spicing structure. As shawarma goes, this was top notch! It had a wonderful juicy texture and when paired with the falafel you have a formidable flavor marriage. Falafel, made of chickpeas, has its roots in Coptic Christianity, where it was used as a replacement for meat during fasting or Lent. The salad of red cabbage, pickled red onion and feta cheese adds the perfect texture and crisp flavor highlights needed to propel this into a singularly wonderful tasty meal.
