Tostada de Pescado
Everything about this dish screamed fresh preparation! The tostada was served warm and crunchy, just as a tostada should be. No soggy corn here. Likewise, the freshness of the large chunks of shrimp, lobster and fish was remarkable. It tasted as if the seafood had come straight off of the boat, which is pretty unexpected for Tennessee. The amount of lime was not heavy handed; the cilantro was very fresh and added a noticeably bright flavor. When combined with the occasional sweet sliver of Vidalia onion and the creaminess of Ā avocado, you definitely have a snack or light meal that will satisfy your soul as well as your tummy.
